No-Bake Banana Cake


°2 bed. graham cracker crumbs
°1 ea. un-salted butter
°8 oz. cream cheese, softened
°2 bed. icing sugar
°pinch of salt
°4 bananas
°1 (20 oz.) can crushed pineapple, well drained
°1 container (8 oz) Cool Whip non-dairy whipped topping {or homemade whipped cream}
°1/3 tsp. chopped pecans
°1 jar (10 oz) maraschino cherries, drained and pat dry with paper towel


Melt 1/2 cup butter (1 stick) and stir in graham cracker crumbs with fork until evenly moistened. Press into the bottom of a 9x13" pan.
Using an electric mixer, mix the remaining 1/2 cup (1 stick) of butter with the cream cheese, icing sugar and salt. beating 3 to 4 min to fluffy. Spreading mix over graham cracker.
Slice bananas and arrange evenly over cream cheese mixture; garnish with crushed pineapple. Spread Cool Whip over pineapple; sprinkle with chopped pecans and place the cherries on top.
Cover and refrigerate at least 2 to 3 hours, or overnight, before serving.
