One pot Mexican rice casserole

 


*ingredients:

°1 lb. minced meat
°1 small onion (diced)
°salt and pepper as needed)
°2 tablespoons of taco seasoning
°1 teaspoon garlic powder
°1 cup white rice
°1 1/2 cups beef broth
°1 15 ounce corn (drained)
°8 ounces of tomato sauce
°1/2 cup of sauce
°1 cup grated cheese

*How to make one pot Mexican rice casserole:

In a large skillet over medium heat, add ground beef seasoned with salt and pepper and cook until brown.
Sprinkle the beef with garlic powder and taco seasoning and toss until well combined.
Add the beef broth to the pan along with the tomato sauce, ketchup, and rice.
Add the corn and stir until well combined.
Covering pan and bring to a boil. Set the heat to low and continue to simmer for 18 to 20 minutes or until the rice is tender.
Sprinkling cheese on top & cover again. Let the cheese melt for 2 to 3 minutes.
