Southern fried salmon pancakes


1 (14 3/4 ounce) canned salmon
1/4 cup finely chopped onion
1/4 cup cornmeal
1/4 cup flour
1 egg
3 tablespoons mayonnaise


Open salmon and drain well. Placing drained salmon in mixing bowl also flake it equaly with a fork. Adding onions, cornmeal, flour, mayonnaise also eggs. Stirring until well mixed.
Shape mixture to discs the size of burger or less. Cook in oil in a frying pan over medium heat until brown on all sides. Flip once while frying.
