Ingredients
1 1/2 cups dry Italian rusk
1 1/3 cups freshly grated Parmesan cheese, divided
1 t salt
2 pack (16 ounces) mozzarella sticks
4 eggs, whisked to blend
1 1/2 c vegetable oil

In a medium bowl, combine breadcrumbs, 1 cup Parmesan cheese, and salt.
Cut every mozzarella stick in half.
Beating eggs in a shallow bowl also dip cheese sticks into the eggs to covering, letting the excess egg drip to bowl. Cover the cheese with the breadcrumb mixture and press to stick and cover. Repeat dipping cheese sticks into the egg mixture and breadcrumbs to coat again. Placing cheese sticks on a baking tray, cover, and freeze for 2 hours, until set.
Heat the oil in a large frying pan over a medium heat. Working in batches, fry cheese until golden brown, about 1 minute per side. Transfer the fried cheese to plates. Sprinkling with rest cheese and serving
