Lemon Blossoms - Diary of a Recipe Collector

So today is a great day!My family and I are going to Disneyland!The preparation for this trip took several months.My children don't know anything. I want to say everything!Do you know how difficult it is to keep secrets?The kids follow me everywhere, so this is not an easy task.Finally, my husband took everyone to swim with my sisters.I have 3 hours to consider and set everything up.Not only packing clothes and swimwear, but also packing a big box of good things to uncover the big surprise in the morning.

Oh yes, we also have dance parties and rehearsals this weekend.Needless to say, I am tired and ready to go on vacation... Not that Disneyworld is going to be a relaxing trip anyway.

* ingredients :

° 1 package of yellow cake mix
° 1, 3.5 ounce package lemon pudding
° 4 eggs
° ½ cup vegetable oil or canola oil
Glaze
° 4 cups powdered sugar
° Half a cup of fresh lemon juice
° Grated peel of one lemon
° 3 tablespoons vegetable or canola oil
° 3 tablespoons water

* Directions :

Preheat oven 350 degres. Coat a small muffin pan with non-stick cooking spray.
In a large bowl, combine cake mixture, pudding mixture, eggs, and oil.Stir with an electric mixer for 2 minutes.
Put 1 tablespoon of the mixture into each muffin cup. Bake for 12 minutes.

Flip the flowers over on a towel when you take the tray out of the oven.For the frosting, sift the powdered sugar into a medium bowl.Add lemon juice, peel, oil and water and stir until smooth. Dip the warm flowers in the glaze as much as possible.Place the flowers on a grid lined with wax paper to prevent them from dripping. Allow the glaze to work well before serving or storing in an airtight container.

*You can also add small pieces of candied fruit immediately after glazing.

Enjoy !
