Corn nuggets


*Ingredients:

°1 (11 ounce) can cream of corn
°1 (11 ounce) can whole corn, drained
°1/2 cup yellow corn flour
°cup all-purpose flour
°1 egg white
°2 tablespoons of milk
°Salt and pepper to taste
°3 cups of vegetable oil for frying

*Directions:

In a medium bowl, stir in the whipped corn and dry whole corn kernels. Line baking sheet with aluminum foil & coat with vegetable oil or cook spray. Place spoonfuls of the corn mixture on the tray and freeze for 3 hours, until firm.
Heat 1 inch of oil to 350°F (175°C) in a large deep fryer, or fill a deep fryer with oil as directed by the manufacturer.
Mix cornmeal, flour, egg whites, milk, salt, and pepper in a medium bowl. Dipping frozen corn cobs into batter, & fry in hot oil to golden brown. Removing to paper towels to drain.
