Chicken Bacon Ranch Potato Bake


°Medium or Yukon Gold Fries
°¼ cup divided olive oil
° Original Ranch Seasoning Mix & Salad Dressing Shaker, Divided 1 Tbsp
°Skinless or thigh boneless chicken breasts, cut into 1-inch pieces
°1½ pounds
°Cheddar cheese  2 cups
°Bacon cooked / crumbled 4-6 slices
°Green onion, thinly sliced ​​2


Preheat oven to 425 degrees F. Grease a 9" by 13" baking dish with olive oil or nonstick spray. Stir the potatoes with half the olive oil and half the seasoning mixture and rub them into the baking dish; Put it in the oven.
While the potatoes are cooking (without disturbing), stir in the remaining chicken in the olive oil and seasoning mixture and allow to sit. After 25 minutes, remove the potatoes from the oven and stir in the chicken.
Spread evenly in skillet and return to oven for another 20-25 minutes, until chicken is cooked through and potatoes are tender.
Sprinkle the potatoes and chicken evenly with the cheese, crumbled bacon, and green onions and bake for another 5-6 minutes, until the cheese has melted. Top with sour cream or ranch dressing and serve warm.
