Copycat panera broccoli cheese soup

* Ingredients : 

°1/4 cup melted butter
° 1/2 medium onion, chopped
° 1/4 cup flour
° 2 cups of cream and a half
° 2 cups broth or chicken broth
° 1/2 pound broccoli (about 3 cups), cut into bite-size pieces
° 1 cup carrots, (matchstick carrots can be purchased in the products section)
° 1/4 teaspoon nutmeg (optional but brings out the flavour)
° 8 oz grated cheddar cheese (2 cups)
° Salt // Pepper

* Methods :

* Melt a quarter cup of butter and fry the onions in it until soft. Sprinkle flour over the mixture. Cooking and stirring on heat for 1-2 minutes.
* Beat in half and half and chicken broth.
* Add broccoli and carrots. Simmer over low heat for 20-25 minutes or until broccoli and carrots are tender.
* Add salt and pepper. You can leave the soup chunky or blend about 1 cup of soup and stir it in for a smoother soup (that's what I do). Return to low heat and add cheese. If the heat is too high, your soup may turn grainy. Add nutmeg if desired.
* Served with crusty bread.
