What is philly cheesesteak?

Philly cheesecake is a sandwich made with strips of rib-eye steak, caramelized onions and provolone cheese. This simple combination is the original classic that has become popular on the East Coast. On the West Coast, Philly Cheesecake has been modified to include paprika and mushrooms but the real "Philly" only serves steaks, onions and cheese on a roll.

Which piece of beef should I use?

Ribeye is the preferred choice for Philly Cheesesteak sandwiches. It becomes well marbled and tender when cooked. Another piece that we used with great results is the sirloin, which is lightweight but very tender when sliced ​​against the grain. You will need a little extra oil on the cooking surface if you are using a sirloin.

 

Best cheeses in Philly cheesecake:

The most popular cheese is mild provolone cheese. We tested a variety of Provolone brands and the only brand we didn't enjoy was Costco's "aged" provolone. The flavor of old provolone was overwhelming. Another popular option is American white cheese. Some restaurants in Philadelphia add cheese similar to Filvita but we like provolone better

 

* Ingredients :

 

° 1 pound rib-eye steak, cut into thin slices *

° 1/2 teaspoon sea salt, or to taste

° 1/2 teaspoon black pepper, or to taste

° 1 sweet onion (large), diced

° 8 slices light provolone cheese (not aged with provolone)

° 4 hoagie rolls, cut into 3/4 slices

° 2 tablespoons of soft unsalted butter

° 1 clove of squeezed garlic

° 2-4 tablespoons of mayonnaise, or to taste

* Instructions :

 

The hoagie cuts 3/4 slices of the way with a serrated knife. Chop the onion into cubes and chop thin slices of beef.

 

In a small bowl, mix 2 tablespoons soft butter with 1 pressed garlic clove. Spread garlic butter on the sliced ​​sides of four hobby wrap. Toast the bread in a large frying pan, stovetop, or tray over medium heat until golden brown, then set aside.

 

Add 1 tablespoon of oil to the skillet / stove and sauté chopped onions until caramelized, then transfer to a bowl.

Bring the mixture to a high temperature and add 1 tablespoon of oil. Spread the thin slices of meat in an even layer. Leave the brown for a few minutes without disturbing, then flip it over and season with half a teaspoon of salt and half a teaspoon of black pepper. Sauté until the meat is fully cooked, then add the caramelized onions.

Divide the cheese into 4 equal portions, cover 2 slices of cheese each, and turn off the heat until the cheese melts without overcooking the meat.

Spread a thin layer of mayonnaise on the toasted side of each roll. Work with one portion at a time, place a toasted piece of bread on each portion and use a spoon to scrape the beef with cheese into the cake as it turns. Serve warm.
