Easy Burrito Casserole


°1 can 16 oz refried beans
°1 can (14 ounces) whole kernel corn, drained
°1 ½ pounds ground beef, or choice of meat
°1 package taco seasoning mix
°1 can of enchilada sauce
°1 small can of green chillies
°8 tortillas, your choice, cutting in half
°2 cups Fiesta Cheese Blend, shredded
°Green onions, for garnish

* Methods 

Preheat oven 350°
Brown beef in skillet
Adding taco seasoning & simmer for a few min
Stir in enchilada sauce, refried beans, corn and small can of green chiles
Stir to combine well and simmer a few more minutes to warm through
In a 9x13 pan, grease the bottom well, then place four of the cut tortillas to cover the bottom of the pan
Top the first layer of tortillas with half the meat mixture and half the grated cheese
Place another layer of cut tortillas over the cheese
Cover the tortillas with the rest of the meat mixture and the rest of the grated cheese.
Cook for 20 minutes
Garnish with chopped green onions
Eat small dishes of salsa, sour cream, chilies, and whatever your family or friends like to put with their burritos.
