Delicious Chicken Pot Pie


°1 cup potatoes, cut into cubes

°1 cup diced onion

°1 cup Celery, diced

°1 cup carrots cut into cubes

°1/3 cup butter

°1/2 c flour

°2 c chicken broth

°1 t salt

°1/4 t pepper

° 4 c cooked and chicken

°2 pie crusts (either store bought or your own recipe)

Heat oven to 400 degrees F . Fry onions, celery, carrots and potatoes in ghee for 10 minutes.

Add flour to the sauteed mixture, stirring well, cook for 1 minute, stirring constantly. Mix the broth with half and half. Gradually stirring in vegetable mixture.

Cooking on medium heat, stir constantly, until it thickens & bubbles.

mix with salt and pepper; Add chicken and stir well.

Pour into a shallow 2-quart casserole dish and top with pie crusts.

Bake for 30-40 minutes or until crust is golden and flaky.
