Turtle-candy-with-pecans-and-caramel





*Ingredients:

° 3 cups whole pecans
° Half a cup of butter
° 1 cup brown sugar
° 1/2 cup corn syrup
°Light salt
° 7 ounces sweetened condensed milk (half a 14-ounce can)
° Half a teaspoon of vanilla
° 1/2 cup chocolate chips (I used milk chocolate chips)
° ½ teaspoon vegetable oil or fat

Placing pecans in a single layer on tray baking. Bake at 350 degrees for 10 minutes or until light brown and fragrant. to calm down. Arrange in groups of 3-4 on silicone liners or parchment paper.
Combine butter, brown sugar, corn syrup, and salt in a 6-quart saucepan. Bring mix to  boil on medium heat. Adding condensed milk & vanilla.
* Continue cooking and stirring until the temperature of the mixture reaches 235-240 degrees. I like to use the ice water test, it is more accurate. Put 1 teaspoon of hot caramel in a bowl of ice water. When you take it out, you should be able to turn it into a ball. Then it is done.
*Quickly pour the caramel over the pecan clusters, making sure that the caramel touches both pecans. Let sit to stiffen.

Melt chocolate chips and oil in microwave on half power, stirring constantly, until smooth. Pour chocolate over each layer of caramel. Leave it on for 1-2 hours or until it hardens.
