Old Fashioned Coconut Cream Pie


° 1 cup sugar

° 1/4 cup all-purpose flour

° dash salt

° 3 large egg yolks

° 2 cups of whole milk

° 1-1/2 tsp vanilla

° 1-1/4 cup sweetened shredded coconut, divided

° 1 pie crust (9 inches), baked

+ Meringue:

° 3 large egg whites

° 6 tablespoons of sugar


In a large saucepan, mix the sugar, flour and salt. Mix the egg yolk and milk; Stir in the dry ingredients until smooth. Cook and stir over medium heat until it thickens and becomes bubbling. Reduce the temperature to a low temperature. Cook and stir for two minutes. Take off the fire. Add vanilla and 1 cup coconut. Pour the hot filling into the pie crust. For meringue, beat egg whites in a bowl until soft peaks form. Gradually beat the sugar until the mixture forms stiff, glossy peaks and the sugar has dissolved. Spread the meringue over the hot filling. Sprinkle the rest of the coconut. Bake at 350 degrees for 12-15 minutes or until golden. Wonderful. Keep it in the fridge
