Hamburger Potato Cheese Casserole


°1 pound minced meat
°1 onion finely chopped
°4 pounds peeled potatoes
°Salt and Pepper
°8 ounces shredded cheddar cheese (about 2 cups)
°1 10.75 oz Condensed Cheddar Cheese Soup
°1 12 ounces evaporated milk
°1/2 cup milk
°1/2 teaspoon salt
°1/4 teaspoon pepper


Spraying 13x9 baking plate with cooking spray & preheat oven to 350 degrees.
Add ground beef and onion to a large skillet, season with salt and pepper, then cook until ground meat is tender and crumbly. Drain the fat and set aside.

Slice the potatoes into thin slices (less than 1/4 inch). Add one layer of potato slices to the bottom of a baking dish. Sprinkling potatoes with salt & pepper.

Put a quarter of the beef mixture on the potatoes. Cover the beef with a quarter of grated cheese. Repeat this process 3 more times.

Combine the condensed cheddar soup, evaporated milk, milk, salt, and pepper, and whisk until smooth. Pour the mixture over the potato/beef/cheese layers.

Cover the dish tightly with aluminum foil and bake at 350 degrees for an hour. Remove the foil and continue baking for an additional 15-20 minutes or until the potatoes are tender and the dish is golden and light brown.
