* Ingredients:
° 32 medium-sized white button mushrooms
° 1 tablespoon of oil
° 1 tablespoon finely chopped onion
° 2 cloves of garlic, minced
° 1/4 tsp. dried oregano
° 1/4 tsp. dried basil
° 1/4 tsp. dry thyme
° 1/4 c cream cheese
° 1/4 c sour cream
° 1/4 cup Mozzarella cheese, grated
° 1 can (4 oz) crabmeat
° salt and pepper to taste
° 1/4 c parmesan cheese
° fresh parsley, to garnish (optional)
1. Preheat oven to 350°F and grease a baking sheet. Put aside.
2. Using a damp paper towel, gently wipe the mushrooms dry. Remove the stem and slices from the mushrooms and finely chop the stems and slices.
3. Over medium heat, add oil to a sauté pan. Once the pan is hot, add the diced onion, minced garlic and finely chopped mushroom stems and slices. Sauté for 2 minutes and remove from heat.
4. Stir in oregano, basil, thyme, cream cheese, sour cream, Mozzarella cheese and crabmeat. Season with salt and pepper to taste.
5. Pour the mixture into each mushroom cap.
6. Sprinkle Parmesan cheese over each stuffed mushroom and bake for 30 minutes or until golden.
7. Remove from oven and serve. Garnish with fresh parsley
