STUFFED MEATLOAF ROLL


*INGREDIENTS:

°2 pounds lean ground beef
°1 cup dry breadcrumbs
°2 beaten eggs
°1 chopped onion
°1 chopped bell pepper
°1 cup chopped mushrooms
°1 cup chopped black olives
°3/4 tsp salt
°1 teaspoon of oregano leaves
°1 can 8 oz tomato sauce
°1 cup grated mozzarella cheese
°1 cup grated cheddar cheese
°2 boxes of croissants

In a large bowl, mix the beef, breadcrumbs, egg, onion, salt and oregano. Stir in 1/2 tomato sauce; put aside. Cut 2 pieces of wax paper 15 inches long. Unroll the croissant dough and do not separate. Lay end to end on top of the waxed paper and place the second piece of waxed paper on top. Now take the rolling pin and roll out the dough until it is half the thickness it was originally. Place the meat mixture in the center and spread it over the dough. Sprinkle the meat with cheese, pepper mushrooms and olives with the rest of the tomato sauce. Roll the meat, jelly-roll style, starting at the narrow end; use wax paper to help. Place the seam down. Place in nonstick 9-1/4-in. x 5-1/2 in. x 2-3/4 in. bread pan. Bake at 375 degrees F for 30 minutes. Drain off any fat that accumulates; put back in the oven for 30 minutes. i did it too
with pizza dough too and that one had a thicker crust
