Skillet Steak with Garlic Butter and Potatoes


*Ingredients


°2-4 small steaks 
° salt and pepper to taste
° garlic powder to taste
° 1 tablespoon of olive oil
° 2 to 4 pounds baby potatoes - diced
° 2-6 tbsp salted butter - soft enough to mash with a fork, 1 tbsp per steak, plus 2 tbsp for the potatoes
° 2 teaspoons minced garlic
° 1 tsp Italian herb mix
° 1 tsp fresh thyme
° 1 tsp fresh parsley

* Methods 
* Preheat oven 400 degrees.  In  bowl, mix butter, garlic & dried herbs & set apart. Generously season the steaks with salt, pepper and garlic powder on both sides.
* Putting skillet on medium-high heat & drizzle with oil. Sear the steaks for 2-3 minutes on each side until nicely browned. Transfering to a plate and set apart.
* Add the potatoes to the skillet, season generously with salt, pepper and garlic powder and sauté 3-5 minutes until golden brown. Pushing potatoes to one side of pan & returning steaks to other side of pan.
* Transfer to the oven and bake for 15-20 minutes until the potatoes are fork tender and the steak is done to your preferred doneness.
*Immediately after removing from the oven, place a dollop of the garlic butter on each steak and the rest on the potatoes and let it melt on the food before tossing the potatoes to coat them in butter, then garnish with chopped thyme and parsley before serving.
