Shepherd's Pie


* ingredients :

° 1 teaspoon salt, plus more to taste
°3 large (1 1/2 to 2 pounds) sweet potatoes, peeled and quartered
° 8 tsp (1 stick) butter, divided
° 1 medium onion, chopped (about 1 1/2 cups)
° 1 to 2 cups of mixed vegetables, such as carrots, corn or peas
° 1 1/2 pounds ground beef
° 1/2 cup beef broth
° Pepper &/or other spice your choice

* Methods :

Boil the potatoes: Put the peeled potatoes, cut into quarters, in a medium saucepan. Cover it with at least an inch of cold water. Add a teaspoon of salt. Bring to a boil, reduce to a simmer, and cook until soft (about 20 minutes). Preheat the oven:
* Preheat the oven to 400 degrees Fahrenheit. Fry vegetables: While the potatoes are cooking, melt 4 tablespoons of butter in a large skillet over medium heat. Add the chopped onion and cook until soft, about 6 to 10 minutes. If you are including vegetables, add them according to the cooking time. Carrots should be cooked with onions, because it takes as long to cook them as onions. If you're going to add peas or corn, add them at the end of the onions cooking, or after the meat begins to cook, as they take very little cooking time.
