Roasted carrots, potatoes & onions

* Ingredients :

° 2 pounds of carrots
° 6 whole potatoes
° 1 sweet onion
° three cloves of garlic
° 6 tablespoons of olive oil
° ½ teaspoon dried thyme
 ° ½ teaspoon of dried parsley
° Salt and pepper to taste

* Preperation :

The oven preheat 475 degrees F.
Peel the carrots, cut into small pieces. Cut the potatoes into small pieces, leaving the skin on. Cut the onions into eighths. Mince the garlic.
Mixing carrots, potatoes & onions in  bowl. Drizzle the vegetables with olive oil and add the garlic, thyme, parsley, salt (to taste) and pepper (to taste). My heart until the vegetables are included with olive oil and spices. Placing on a cookie sheet in single layer & covering with foil.
Grill for forty-five minutes. Remove foil and continue grilling for another half hour or until golden brown, stirring every 10 minutes.
