PINEAPPLE-PECAN CAKE WITH CREAM CHEESE GLAZE


*Ingredients:

+CAKE:

°2 cups flour

°2 cups of sugar

°2 teaspoons baking soda

°2 eggs

°1 (20 ounce) can mash pineapple with juice

°1 cup chopped pecans, optional

+ICING:

°1 stick of softened butter

°1 package (8 ounces) softened cream cheese

°2 cups icing sugar

°1 tablespoon of vanilla

*Directions:

CAKE:
Combine flour, sugar and baking soda in a large bowl. Add eggs, pineapple with juice and pecans, if using. Stir until moistened. Pour into a buttered 9×13 inch pan. Bake in preheated 350°F oven for about 35 minutes or until a toothpick comes out clean. Cool completely.
ICING:
Combine cream cheese, butter, icing sugar and vanilla. Beat until smooth.
Frost the cake using all of the frosting.
