Oven Roast Sausage & Potatoes


°1 pack smoke sausage, slice
°1 onion, peel & chop
°5 large potatoes, peeled and cut into ½ inch cubes
°olive oil
° salt
°freshly ground black pepper
°sweet paprika
°dried thyme
°a handful of sharp cheddar cheese


Preheat oven 400*F.
Line a large baking sheet (with sides) with several sheets of foil and spray with cooking spray. Put aside.
Put the sausage rings, onions and potatoes in a large bowl. Drizzle with a few tablespoons of olive oil and season to taste with salt, pepper, paprika and dried thyme. Mix with your hands until everything is evenly distributed. Pour it onto the baking sheet and spread it out as much as you can.
Place in the hot oven and roast for 45 minutes to an hour, stirring about every 15 minutes, until the potatoes are golden brown and tender. Turn off the oven.
Spread the cheese over the cooked meat and potatoes. Return to the oven for a few minutes to melt the cheese.
