*Ingredients :
°4 boneless, skinless chicken breasts
°1 cup Caesar dressing
°½ cup sour cream (optional)
°1-1½ cups grated Parmesan cheese
*Instructions
Heat oven 375F also spraying inside of an 8" x 11" baking dish with cook spray.
If the breasts are uneven in thickness, mash them (placed in a Ziploc bag and on a flat surface) to an even ¾"-1" thickness using a meat pounder. Sprinkle the breasts (both sides) with grated Parmesan cheese and freshly ground black pepper, and place them in the prepared baking dish.
Whisking Caesar dressing & sour cream in bowl. Pour Caesar/sour cream mixture over each breast then sprinkle grated Parmesan on top.
Placing prepared chicken in oven also baking at 375°F for 30 min or to a meat thermometer inserted into the thickest part of one of the medium breasts reads 150°F.
Turn the oven to broil and broil the breasts for an additional 2 to 4 minutes or until the chicken is browned. It can burn quickly, so watch it carefully. When done, a meat thermometer should register 165F when stuck into the thickest part of one of the middle breasts.
Remove from oven, cover loosely with foil and let chicken rest 5-10 minutes before serving. If desired, garnish with chopped parsley.
