*Ingredients:
°3 cucumbers, peel also cut to 1/4-inch-thick slices
°1 medium onion, sliced and separated into rings
°3 medium tomatoes, quartered
°1/2 cup of vinegar
°1/4 cup of sugar
°1 cup of water
°2 teaspoons of salt
°1 teaspoon coarsely ground fresh black pepper
°1/4 cup oil
°1 tsp chop fresh mint (optional)
