Crawfish Bread


°1 pound crawfish tail meat, peeled, cleaned and deveined
°1/2 stick of butter
°1 clove garlic, minced
°3/4 cup ripe tomatoes, chopped and drained
°1 tablespoon Cajun seasoning
°3/4 cup Monterey Jack cheese
°1/4 cup grated parmesan
°1/2 cup mayonnaise
°3 tablespoons chopped fresh parsley
°1 loaf of French bread

*Directions :

Preheat oven to 350 degrees F.

Rinse the crayfish. In skillet, melt the butter ON medium heat. Add the garlic and cook for a few minutes. Add tomatoes, Cajun seasoning and crawfish. Brown for 1 minute. Remove from fire.
In a bowl, combine the cheeses, mayonnaise and parsley. Adding tomato & crawfish mixture to mayonnaise mixture.
Cut the bread in half then cut the bread lengthwise. Pour the mixture over the bread and bake for 10 to 15 minutes. Then broil for another 3-5 minutes. Watch carefully so as not to burn. Cutting bread to individual portions.
