Chicken pot pie


°1 c potato, diced
°1 c onion, diced
°1 c celery, diced
°1 c carrots, diced
°1/3 cup melted margarine
°1/2 cup all-purpose flour
°2 cups of chicken broth
°1 cup half and half
°1 teaspoon of salt
°1/4 teaspoon pepper
° 4 cups chicken, cooked and chopped
°2 pie crusts (store bought or your own recipe)

* Directions:

Preheat the oven to 400°F. Brown onion, celery, carrots & potatoes in margarine about 10 min.
Adding flour to sautée mix, stir well, cook for 1 min, stir constantly. Blend broth / half & half. Gradually stir into vegetable mixture.
Cook over medium heat, stirring constantly, until thickened and bubbly.
Stirring in salt / pepper; adding chicken & stir well.
Pour to a shallow 2-quart casserole plate also topping with pie crusts.
Bake for 30 to 40 minutes or until the crust is golden and flaky.
