Big Apple Fritters



*ingredients:

° 3 cups all-purpose flour
° 1 12 cups of sugar
° 3 teaspoons baking powder
° Salt 1/2 teaspoon
° 3/4 teaspoon apple pie spice
° 2 large eggs
° 1 cup milk
° 1 teaspoon vanilla
° 2 tablespoons butter, soft
° 1 cup peeled and chopped apple
° frying oil
° Confectioner's Sugar

* Directions : 

Pour oil to a deep skillet or Dutch oven to depth of for 3 inches.
Heated 375 degrees.
Sifting flour, sugar, salt, also apple pie spice to  mix bowl.
Putting eggs in  separate bowl also beat them sweetly.
Adding milk & vanilla.
Make a hole in the center of the dry ingredients and pour in the milk mixture. Add the butter and beat with a mixer on low speed to soften it for half a minute. Scrape down sides of bowl and increase speed to medium for 2 minutes longer. Fold in the apple. Using a 1/4 cup measuring cup, drop it into the hot oil. Be careful not to spraying oil on yourself. If the pot isn't too large on top, you may only be able to cook once. When you cook the pancakes, they will rise to the top.
When the first side turns brown, carefully flip it with a spoon to brown the second side.
Drain on paper towels and sprinkle immediately and generously with confectioners' sugar or glaze. I prefer the glaze.
To make dessert glazes, whisk together sugar and milk or water and glaze while warm.
