An excellent ricotta cake recipe with only 4 ingredients, to make with your eyes closed. A delight!Lighter than a cheesecake or a pie, this dessert cake is perfect for eating well without spending hours in the kitchen.

* Ingredients
° 3 eggs
° 500g of white cheese
° 100g of sugar
° 90g flour
° Optional:
Zest of half a lemon (or half a cac of liquid vanilla)

* Preperation :

 Step 1 - Cottage cheese cake Turn the oven on to 180 ° C
Mix the cottage cheese and the sugar in a bowl. Separate the whites from the yolks. Stir the egg yolks into the cottage cheese / sugar mixture.
 Step 2 - Cottage cheese cake Add the flour and mix.
 Step 3 - Cottage cheese cake Add the lemon zest or vanilla.
 Step 4 - Cottage cheese cakeMake the egg whites until stiff, and gently incorporate them into the mixture.
 Step 5 - Cottage cheese cake Pour the cottage cheese and egg sugar preparation into a springform pan about 20cm in diameter, previously buttered or sprayed with fat.
Put the cake in the oven at 180 ° C for 30min.
Take out of the oven and let cool 1 hour before serve
