Chicken & Biscuits-Casserole



This baking dish showcases the unique taste of game with savory cookies. You can substitute chicken, turkey or Cornish hens for game.

* INGREDIENTS :

° 3 Cornish chickens or 1 large chicken
° 6 bacon slices, diced
° 1/4 cup (60 mL) butter
° 6 small onions, peeled
° 4 carrots, cutting to large pieces
° 8 oz (250 g) slice ​​mushrooms
° 3 stalks celery, thinlysliced
° 1/4 cup (60 mL) all-purpose flour
° 1 C. (5 ml) salt
° 2 cups (500 mL) milk
° 1 chicken stock cube
° 2 tbsp. (30 mL) dry sherry (optional)
Savory cookies
° 2 cups (500 mL) all-purpose flour
° 4 tbsp. (20 ml) baking powder
° 1 C. (5 ml) salt
° 1/2 tsp. (2 ml) paprika
° 1/2 tsp. (2 ml) savory
° 1/4 cup (60 mL) vegetable fat
° 1/4 cup (60 mL) chopped fresh parsley
° 1 cup (250 ml) milk

* PREPERATION :

Pan
Cut the game or chicken into pieces. Flour lightly. Saute bacon to crisp; Draiin on paper towels. Brown the game in the bacon fat; transfer to a baking dish.
Add butter to the pan; lightly brown the onions, carrots, mushrooms and celery. Add to the baking dish, along with the bacon.
Combine the flour and salt with the remaining liquid in the skillet; gradually add the milk. Add the bouillon cube; stirring until mix thick & bubbles. Add the sherry; pour into the dish.
Baking at 350 ° F (180 ° C) about 35 min . Remove from the oven; increase the temperature to 425 ° F (220 ° C). Garnish with cookies. Bake 25 minutes longer, or until top is lightly browned.
Savory cookies
Mix the dry ingredients. Stir into the vegetable fat until the mixture resembles coarse breadcrumbs. Add the parsley. Add milk and mix quickly to form a soft dough. Drop by heaping spoonfuls on the preparation in the dish.
