Mexican Street Corn ' Recipe




Creamy, tangy and tangy, this is definitely one of my favourite methods of frying corn in the summer. If you've been studying the weblog for a while, you already know that fresh corn is definitely one of my all-time favorites, it's crunchy, juicy and sweet like no other, of course I'll always love it, but this Mexican lamb lettuce takes it to a whole new level. 

* ingredients :

° 4 ears of fresh corn, husk
° Extra virgin olive oil for lubrication
° 1½ tablespoons mayonnaise
° 1 clove minced garlic
° Peel and juice of 1 lemon
° 1 cup chopped green onions
° Cotija cheese, crumbled 1/3°C
° ½ cup finely coriander
° ½ tsp smoked paprika or chili powder
° 1 hot pepper, diced *
° Half a teaspoon of sea salt

* directions : 

Heat grill over medium-high heat, brush corn with olive oil and grill on each side for 2 minutes, remove broth from grill, mix mayonnaise, garlic, lemon peel and juice in a bowl.  Cut the corn kernels into slices and add them to the bowl with the green onions and stir well, then add the cheese, coriander, smoked pepper, jalapeno and salt, season and eat immediately or put in the refrigerator until it becomes soft
