* Ingredients:

° 4 to 6 medium-sized catfish fillets.
° 1 cup milk
° salt
° 1 cup fine cornmeal
° All-purpose flour cup
° 1 tablespoon garlic powder
° 1 tablespoon black pepper
° 1 tablespoon paprika
° Half a tablespoon of cayenne pepper
° 1/2 tablespoon celery seedsEnough oil for frying, preferably peanut oil

* Preparation:

In a heavy-bottomed iron skillet, better yet, pour enough oil into the frying melanissa, that is, about two fingers high, lying flat, in the pan.

Reduce heat to medium. Turn on the oven on medium to high heat, and place a cookie mold inside. Place a rack on top of the cookie sheet, also for baking cookies.

While the oil begins to heat up, take the catfish and moisten it in milk, then mix it with cornmeal, flour, and any seasonings you want to add. let the oil reach a high temperature; To see when you reach that temperature, throw a few breadcrumbs inside, and if it burns right away, that's fine.

When the oil is hot, sprinkle the catfish fillets with salt and dip them in the breadcrumbs, discarding any excess breadcrumbs. Put the melanese slices in the oil.

Fry until golden brown, up to 5 minutes, depending on thickness, and use a metal spoon to remove from skillet.
Once the fish is cooked, put it in the oven while the rest of the fish is cooked in the pan. Keep the fried catfish warm in the oven: This will help prevent it from becoming crunchy, so it's essential.

When serving, you can add any of your favorite sauces, or spices of your choice, as well as with salad, mashed potatoes, french fries or whatever you like.
